Meatless Meatballs
This meal is flavoursome and is enhanced by the
Italian Tomato Sauce
from last week.

Ingredients

potatoes

garlic

finely chopped

rice bran oil

fine rolled oats

tsp
dry mixed herbs

grated
carrot

cup
soy sauce/tamari
½
cup
chickpea (besan) flour
(use
wholemeal flour
as an alternative)

Italian tomato sauce
1
packet
wholemeal spagetti
cooked as per instructions or
brown rice
Instructions
Boil potatoes until soft, drain and mash.
Mix potato and all other ingredients (except tomato sauce and spaghetti) together well.
Form into balls (¼ cup each) and put on a lightly oiled baking tray.
Bake at 150°C/300°F for 40 minutes or until cooked right through.
Cover meatballs with tomato sauce (warm up first if you are using from a from fridge or freezer).
Serve on spaghetti or rice with a sprinkling of fresh green herbs.
