Lamb Burgers with Hummus

Packed full of flavour and qwik to prepare, these burgers deliver nutrients with convenience.

Ingredients

  • 150 g green beans or 1 bunch asparagus trimmed
  • 300 g baby carrots trimmed, halved length ways
  • 500 g lamb steaks sliced
  • oil spray
  • 2 tsp ground cumin
  • 365 g loaf Turkish bread halved horizontally, quartered
  • cup hummus
  • 2 tomatoes sliced
  • ½x 450g can no-added-salt sliced beetroot drained
  • fresh coriander

Instructions

  • Place a large non-stick frying pan over a high heat. Add beans and carrots. Cook for 5 minutes until tender. Set aside.
  • Lightly spray lamb with oil and sprinkle with cumin. Stir-fry for 2-3 minutes or until cooked to your liking. Transfer to a plate to rest for 5 minutes.
  • Cut carrots and beans to fit bread. Top bread with hummus, vegetables and lamb. Garnish with coriander.
