Ham and Cheese Burritos

These can be whipped up in just on 10 minutes. Delicious, and packed full of fuel for post-training meals.

Ingredients

  • 3 cups cooked rice or cooked diced potatoes
  • 1 cup diced ham
  • 1 cup shredded cheddar cheese
  • ½ cup prepared salsa
  • 1 cup cooked beans
  • 4 scrambled eggs (optional)
  • 6 large (10-12 inch) whole wheat tortillas

Instructions

  • Combine all ingredients except tortillas, adding salt and pepper to taste. Scramble eggs over medium-high heat, if using.
  • Warm tortillas one at a time in a dry pan at medium-high heat, flipping after 1-2 minutes. Immediately stuff each with about 1 cup of the filling mixture. Roll tightly, being sure to fold in the short ends first.
