Ingredients
3 cups cooked rice or cooked diced potatoes
1 cup diced ham
1 cup shredded cheddar cheese
½ cupprepared salsa
1 cup cooked beans
4 scrambled eggs (optional)
6 large (10-12 inch) whole wheat tortillas
Instructions
Combine all ingredients except tortillas, adding salt and pepper to taste. Scramble eggs over medium-high heat, if using.
Warm tortillas one at a time in a dry pan at medium-high heat, flipping after 1-2 minutes. Immediately stuff each with about 1 cup of the filling mixture. Roll tightly, being sure to fold in the short ends first.
