Butter Chicken
Butter chicken is such go to for an Indian meal, but this one is so simple, prepare everything in the morning and put it in the slow cooker. When you return home at the end of the day it is ready to eat.

- 1 Tbsp. canola oil
- 3 large cloves garlic finely chopped
- 1 Tbsp. mild or hot curry powder
- 2 tsps. ground coriander
- 400 g 2, diced tomatoes
- 2 Tbsps. tomato paste
- ½ cup low-fat plain yogurt
- 2 medium onions finely diced
- 1 Tbsp. grated fresh ginger
- 2 tsps. ground cumin
- 750 g boneless skinless chicken breasts, cut in 6-8 chunky pieces
- 1 cup light evaporated milk
- 1 Tbsp. garam masala
- 1 Tbsp. sugar
- salt to taste
Set a medium to large-sized slow cooker to low. Heat oil in a large pan. Add onions and garlic. Cook, stirring frequently, until onions are clear but not browned. Stir in ginger, curry powder, cumin, and corinader. Cook for about one more minute.
Add chicken to a pan over a moderate heat. Tip pan contents into a slow cooker. Stir in tomatoes, evaporated milk, tomato paste and garam masala. Cover and cook on low for 6-8 hours.
Stir in yogurt and sugar. Season with salt. Leave for another 15.20 minutes (on longer cooking the yogurt may separate.) Serve on rice with poppadums and cucumber and tomato salad on the side.
