Pork Loin with Chutney

This is a great combination of the recipes from the last two weeks with some grilled meat to really bring this dish together.

Ingredients

  • 2 Tbsp Peach Chutney
  • 2 Tbsp olive oil
  • 500 gm pork loin
  • salt, pepper and sugar to rub

Instructions

  • In a small bowl, combine 2 tablespoons Peach Chutney with an equal amount of olive oil to make a glaze for the pork.
  • Heat the grill. Rub the pork with a good sprinkle of salt, pepper and sugar.
  • Grill pork to at least medium doneness, 12-15 minutes total. Just before pork is done, brush it generously with the glaze. Let rest for a few minutes before slicing.
