Ingredients
½ brown onionfinely chopped
½ red capsicumfinely chopped
½ yellow capsicumfinely chopped
1 garlic clovefinely chopped
250g beef mince
2 tspMexican Chilli Powder
400gcan no-added-salt chopped tomatoes
200g no-added-salt red kidney beans, rinsed, drained
2 tablespoons reduced-fat sour cream
fresh coriander leaves, to serve
1 soft wholemeal tortilla, warmed until crisp, cut into quarters, to serve
lime wedges, to serve
Avocado Salsa
½ small ripe avocadodiced
½ small Lebanese cucumberdiced
sprig coriander leavesfinely chopped
1 Tbsplime juice
Instructions
Lightly spray a large non-stick frying pan and heat over medium heat. Add onion, capsicums and garlic and cook, stirring occasionally, for 3 minutes or until fragrant. Add beef and cook, breaking up mince with a wooden spoon, for 4-5 minutes or until browned.
Add chilli powder to pan and cook, stirring, for 1 minute. Add tomatoes and bring to the boil. Reduce heat to low and simmer stirring occasionally, for 30 minutes. Add beans to mixture, stirring to combine. Cook, stirring occasionally, for 10-15 minutes or until chilli con carne has thickened.
Meanwhile, to make avocado salsa, combine all ingredients in a medium bowl. Season with freshly ground black pepper.
Divide chilli con carne among two serving bowls top each with a dollop of sour cream and season with freshly ground black pepper. Sprinkle with coriander leaves, then serve with crisp tortilla, avocado salsa and lime wedges on the side.
