Chilli Con Carne with Avocado Salsa

A nice bit of kick to the taste buds. Always a popular meal in my house.

Ingredients

  • ½ brown onion finely chopped
  • ½ red capsicum finely chopped
  • ½ yellow capsicum finely chopped
  • 1 garlic clove finely chopped
  • 250 g beef mince
  • 2 tsp Mexican Chilli Powder
  • 400 g can no-added-salt chopped tomatoes
  • 200g no-added-salt red kidney beans, rinsed, drained
  • 2 tablespoons reduced-fat sour cream
  • fresh coriander leaves, to serve
  • 1 soft wholemeal tortilla, warmed until crisp, cut into quarters, to serve
  • lime wedges, to serve

Avocado Salsa

  • ½ small ripe avocado diced
  • ½ small Lebanese cucumber diced
  • sprig coriander leaves finely chopped
  • 1 Tbsp lime juice

Instructions

  • Lightly spray a large non-stick frying pan and heat over medium heat. Add onion, capsicums and garlic and cook, stirring occasionally, for 3 minutes or until fragrant. Add beef and cook, breaking up mince with a wooden spoon, for 4-5 minutes or until browned.
  • Add chilli powder to pan and cook, stirring, for 1 minute. Add tomatoes and bring to the boil. Reduce heat to low and simmer stirring occasionally, for 30 minutes. Add beans to mixture, stirring to combine. Cook, stirring occasionally, for 10-15 minutes or until chilli con carne has thickened.
  • Meanwhile, to make avocado salsa, combine all ingredients in a medium bowl. Season with freshly ground black pepper.
  • Divide chilli con carne among two serving bowls top each with a dollop of sour cream and season with freshly ground black pepper. Sprinkle with coriander leaves, then serve with crisp tortilla, avocado salsa and lime wedges on the side.
