Lime & Lemongrass Dressing

This is a flavoursome dressing that bring a zing to any salad.

Servings: 1 litre

Ingredients

  • 300 g (2 cups) ginger peeled, roughly chopped
  • 200 (1½ cups) lemongrass roughly chopped
  • 100 g (about 3) chilli deseeded, roughly chopped
  • limes zest and juice
  • 30 g lime leaf 1 cup,  (optional)
  • garlic cloves
  • 60 ml sesame oil ¼ cup
  • 85 ml  fish sauce ⅓ cup
  • 100 g mint leaf 4 cups 
  • 100 g coriander 4 cups)
  • 375 ml water 1½ cups

Instructions

  • Place all the ingredients in the blender and blitz for 20-30 seconds. Strain through a sieve and then bottle the dressing in a suitable container. Keep in the fridge and shake before use, as the layers will separate naturally.
