Although not a true soup this is a cross between a dahl and a soup. Regardless, it is delicious.

Ingredients
1 large onionchopped
2 cloves garlicchopped or crushed
2 Tbspoil
1 tsppground cumin
1tspground tumeric
1tspmild curry powder
1 stalk celeryroughly chopped
1 large carrotroughly chopped
400g can tomatoesblended
1 cupred lentils
6 cups hot water
1 cup cashew nuts
1 cup cold water
1 tspsalt
4 Tbspdate puree or honey
Instructions
Saute onion, garlic and oil until clear.
Stir in spices and vegetables.
Add lentils, tomatoes and water and bring to boil. Simmer for around 30 minutes or until lentils and vegetables are cooked.
Blend with a stick blender.
Separately blend cashews and cold water to make a thick cream. Add to the pot.
