Rub steaks with salt, pepper, a sprinkle of sugar, and a dash ground coriander. Heat a lighlty oiled sauté pan to medium-high.
Sear the steaks in the hot pan. After second side has seared, turn heat to medium and cook to desired degree of doneness, about 10-12 minutes total. Let rest for a few minutes while you grill the bread.
Brush both sides of bread with butter or oil. Grill in hot pan or under broiler until both sides are crisp.
