Apricot and Cardamom Christmas Cookies

These a deliciously crunchy, perfect for a mid-ride or post-ride snack.

Ingredients

  • 1 cup oats
  • 1 cup flour
  • ½ tsp ground cinnamon
  • ½ tsp ground cardamom
  • ¼ tsp ground cloves
  • ½ cup desiccated coconut
  • ¾ cup caster sugar
  • ¼ cup chopped nuts
  • ¼ cup dried apricots finely chopped
  • 1 tsp baking soda
  • 4 tbsp golden syrup
  • ½ cup canola oil
  • 1 egg lightly beaten

Instructions

  • Preheat oven to 320°F. Line 2 baking trays with baking paper.
  • In a large bowl, place the oats, flour, spices coconut, sugar, nuts and apricots.
  • In a small jug, place the remaining ingredients and stir well.
  • Shape mixture into small balls. Flatten with a fork. Bake for 15 minutes until light golden. Cool. Store in an airtight container for up to 4 days.
