Spiced Sweet Potato Fries with Creamy Avocado Dip

- 1 sweet potato cut lengthwise into wedges
- 2 tsp extra-virgin olive oil
- 1 tsp Cajun seasoning divided
- ⅛ tsp hot Hungarian paprika
- ½ avocado
- ¼ cup (2.5 ounces) silken tofu
- 1 tbsp fresh lime juice
- ⅛ tsp kosher salt
Preheat the oven to 450°F. Place the sweet potato on a baking sheet and drizzle with the oil. Toss to coat. Sprinkle with ½ teaspoon of the Cajun seasoning and the paprika. Bake for 15 minutes, or until the wedges are soft inside with a crisp crust.
Meanwhile, in a small bowl, stir together the avo-cado, tofu, lime juice, the remaining ½ teaspoon Cajun seasoning, and salt until smooth. Serve the avocado dip with the fries.
