250gdried linguine
450glean beef sausages
1Tbsp.olive oil
3cloves garlic,crushed
¼tspdried chili flakes
4cupsbroccolini or broccoli floretscoarsely chopped
½cupfrozen peas
2large courgettes,thinly sliced
¼cupgrated parmesan,to serve
Instructions
Cook pasta following packet instructions, until al dente. Drain, reserving ⅔ cup of pasta cooking water.
Meanwhile, remove sausage meat from casings. In a large non-stick frying pan, heat oil over high. Cook sausage meat, breaking it up with a wooden spoon, for 6-8 minutes, or until browned. Add garlic and chilli flakes, Cook, stirring, for 1 minute.
Add broccolini, peas and courgette to pan with ⅓ cup of the reserved cooking water. Cook for 3-4 minutes, or until greens are tender, Add pasta to the pan with remaining cooking liquid. Season mixture with cracked black pepper and toss to coat.
Divide pasta among 4 bowls and serve topped with parmesan.
