Oat & Raisin Biscuits

These are a great after training snack, as well as being perfect mid-adventure.

Ingredients

  • ¾ cup raisins
  • 2 cups rolled oats
  • 1 cup plain wholemeal flour
  • 2 Tbsp sugar brown
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp vanilla extract or essence
  • ¼ cup macadamia, olive or canola oil
  • ½ cup apple purée
  • 1 egg

Instructions

  • Heat oven to 180°C/355°F. Line 2 large baking trays with baking paper. In a small bowl, place raisins. Cover with warm water and leave to soften.
  • Meanwhile, in a medium bowl, combine rolled oats, flour, sugar, cinnamon and baking soda and stir well to combine. In another bowl, whisk remaining wet ingredients.
  • Drain and coarsely chop soft raisins. Add to dry ingredients. Add wet ingredients and mix to combine.
  • Wet hands slightly and shape tablespoons of mixture into balls. Place on prepared baking trays and press gently to flatten. Bake for 15-20 minutes or until golden. Leave biscuits on trays to cool completely before serving.
