This chutney is fresh and flavoursome, it goes well with grilled meats and roast chicken. We enjoyed it with pork.

Ingredients
4-6medium peaches, coarsely chopped (no need to remove skin)
½cupbrown sugar
½cupwhite or apple cider vinegar
½juice of a lemon
1jalapeno, chopped
1tspchopped fresh ginger
½medium onion, chopped
2Tbsps.salt
Instructions
Place all ingredients in a large heavy pot. Cook over medium-high heat, stirring occasionally, until peaches have softened and the syrup has turned a caramel color, about 20 minutes. Let cool.
Run in food processor or blender for a few seconds to achieve an even chunky consistency.
