Spicy Peanut Butter Cookies

These cookies have a bit of zing. If you enjoy curry, they are just for you.

Ingredients

  • 1 cup natural peanut butter
  • ¾ cup firmly packed brown sugar
  • 1 egg
  • 4 tsps chili powder
  • ¾ tsp baking soda
  • pinch of kosher salt
  • 18 large dark chocolate chips

Instructions

  • Preheat the oven to 350℉(177℃). Line a baking sheet with parchment paper.
  • In a food processor, combine the peanut butter, brown sugar, egg, chili powder, baking soda, and salt. Process until combined and smooth.
  • Scoop out balls (about 2 tablespoons each) and place on the baking sheet. Press with the tines of a fork. Bake for 10 minutes, or until lighlty browned around the edges.
  • Remove from the oven and press a chocolate chip into the center of each cookie. Let the cookies rest on the baking sheet for 2 minutes, then remove to a rack to cool completely.
