Cinnamon Chili Rubbed Pork with Raw Sprout Slaw

Ingredients

  • 2 grapefruit
  • 2 scallions, thinly sliced, greens and whites kept separate
  • 2 Tbsps. olive oil
  • 1 tsp olive oil
  • Kosher salt and ground black pepper
  • 3 cups shredded Brussels sprouts
  • ½ cup shredded carrot
  • ½ tsp brown sugar
  • ½ tsp chili powder
  • ¼ tsp ground cinnamon
  • 8 ounces pork tenderloin

Instructions

  • Preheat the oven to 400℉/204℃. Juice 1 grapefruit to yield 6 tablespoons. Set the juice aside. Segment the second grapefruit: With a sharp knife, cut off enough of the top and bottom of the grapefruit to reveal a circle of flesh. Cut away the peel, following the contours of the grapefruit in 1 hand and a paring knife in the other, slide the knife down in between the membranes to release the flesh into a small bowl.
  • In a large bowl, whisk together the reserved grapefruit juice, the scallion whites, 2 tablespoons of the oil, and a pinch of salt and pepper. Toss in the Brussels sprouts, carrot, the grapefruit segments, and the scallion greens until completely coated in the dressing. Season to taste with additional salt and pepper.
  • In a small bowl, combine the remaining 1 teaspoon oil, the brown sugar, chili powder, cinnamon, and ½ teaspoon salt. Rub all over the pork tenderloin and transfer to a baking sheet. Roast for 15 minutes, or until a thermometer inserted in the center reaches 145℉. Let rest for 5 minutes before slicing and serving with the slaw.
