Pork Loin with Chutney

Using last weeks chutney this meal really came to life. The grilled pork is a delightful mix of salty and sweet.

Ingredients

  • 2 Tbsps. Peach Chutney
  • 2 Tbsps. olive oil
  • 1 pound pork loin
  • salt, pepper, and sugar to rub

Instructions

  • In a small bowl, combine 2 tablespoons of chutney with an equal amount of aolive oil to make a glaze for the pork.
  • Heat the grill. Rub the pork with a good sprinkle of slat, pepper, and sugar.
  • Grill pork to at least medium doneness. 12-15 minutes tota. Just before pork is done, brush it generously with the glaze.. Let rest for a few minutes before slicing.
