Chef Ray – Purple Cabbage Slaw

Ingredients

YOGURT DRESSING

  • ½ cup whole milk yogurt
  • 3 Tbsps. minced shallots
  • 2 Tbsps. extra-virgin olive oil
  • 1 Tbsp. apple cider vinegar
  • ¾ tsp fine sea salt
  • ¼ tsp ground black pepper

SLAW

  • 5 cups thinly sliced red/purple cabbage (remove core)
  • ½ cup cilantro leaves, chopped(optional)

Instructions

  • In a salad bowl, whisk together the yogurt, shallots, oil, vinegar, salt, and pepper. Add the cabbage and cilantro (if using), and toss to combine.
  • Refrigerate for at least 1 hour prior to serving. Toss again just before serving. Store leftovers in an airtight container in the fridge for up to 5 days.
