Apricot and Cardamom Christmas Cookies
These a deliciously crunchy, perfect for a mid-ride or post-ride snack.
Servings: 26 pcs
Ingredients
- 1 cup oats
- 1 cup flour
- ½ tsp ground cinnamon
- ½ tsp ground cardamom
- ¼ tsp ground cloves
- ½ cup desiccated coconut
- ¾ cup caster sugar
- ¼ cup chopped nuts
- ¼ cup dried apricots finely chopped
- 1 tsp baking soda
- 4 tbsp golden syrup
- ½ cup canola oil
- 1 egg lightly beaten
Instructions
- Preheat oven to 320°F. Line 2 baking trays with baking paper.
- In a large bowl, place the oats, flour, spices coconut, sugar, nuts and apricots.
- In a small jug, place the remaining ingredients and stir well.
- Shape mixture into small balls. Flatten with a fork. Bake for 15 minutes until light golden. Cool. Store in an airtight container for up to 4 days.
