Black Bean and Spicy Avocado Tortilas
Protein combined with flavour, this was so delicious.

Ingredients
- 500 g lean beef mince fat trimmed, cut into chunks
- 1 large onion finely chopped
- 1 large carrot peeled, diced
- 1 small zucchini/courgette trimmed, diced
- 2 cloves garlic crushed
- 1 tsp Mexican seasoning plus extra ¼ teaspoon
- 2 tbsp tomato paste
- 2×400 g cans black beans drained, rinsed
- 400 g can cherry tomatoes
- ½ firm ripe avocado diced
- 2 tbsp chopped fresh coriander
- Squeeze lemon juice (optional)
- 4 plain wholemeal tortillas grilled
Instructions
- Spray a large pan with oil and set over a high heat. Brown mince and set aside.
- Spray saucepan again with oil and set over a medium heat.Add onion, carrot and zucchini.Cook, stirring occasionally, for 5-6 minutes, until soft.
- Add garlic and Mexica seasoning. Cook, stirring or 1 minute. Add tomato paste and cook for another minute.
- Add cooked mince, black beans, tomatoes and 1 cup water to saucepan. Bring to the boil, reduce heat and simmer for 20 minutes, until mixture is thick.
- Meanwhile, in a medium-sized bowl combine the extra Mexican seasoning with the avocado and coriander. Add a squeeze of lemon juice if desired.
- Place 1 grilled tortilla on each serving plate. Top with bean mixture and spicy avocado.Serve immediately.
