Walnut Slaw with Cilantro

Fresh, delicious and the perfect compliment to a main meal.

Ingredients

  • cup walnuts chopped
  • 2 tbsp fresh lime juice
  • 1 tbsp safflower or olive oil
  • ½ tsp Dijon mustard
  • 4 cups store-bought coleslaw mix (almost 5 ounces)
  • ½ apple cut into matchsticks
  • ½ cup cilantro chopped
  • Kosher salt and ground pepper

Instructions

  • In a medium skillet, toast the walnuts over medium hear for 5 minutes, or until fragrant. Set aside.
  • In a large bowl, whisk together the lime juice, oil, and mustard. Add the coleslaw mix, apple, and cilantro, and toss with the dressing to coat. Season to taste and toss with the dressing to coat. Season to taste with salt and pepper. Enjoy right away, or refrigerate for 1 hour for the flavors to meld, if desired. Sprinkle with the reserved walnuts before serving.
