Chef Ray – Apricot Bliss Balls
These were surprisingly easy to make. Healthy and delicious, great for school and work lunches.
From: Dixon, Jeremy; (2013) The Revive Cafe Cookbook 3
Makes 26 balls
- 1 cup dried apricots
- 1 cup dried dates
- 3 cups boiling water
- ½ cup almonds
- ½ cup cashew nuts
- ¼ cup walnuts
- ¼ cup sunflower seeds
- garnish: ½ cup sesame seeds
- Put the fruit and boiling water in a bowl for 5 minutes to soften. Drain.
- Combine all fruit, nuts and seeds in a food processor and blend until it forms a big ball.
- Form into smaller balls and roll in the sesame seeds.
Although I’m not a qualified chef I do like to pretend I’m on Master Chef. I source the recipes from the stated source (not sauce) and make them taking the photo of the meal I produce for myself.
