Chef Ray – Pork Loin with Chutney

This is a great combination of the recipes from the last two weeks with some grilled meat to really bring this dish together.

From: Thomas, Biju & Lim, Allen (2011) The Feedzone Cookbook – Fast and Flavorful Food for Athletes Velo Press

Serves: 4

  • 2 tablespoons Peach Chutney (See recipe from two weeks ago here)
  • 2 tablespoons olive oil
  • 500gm pork loin
  • salt, pepper and sugar to rub
  1. In a small bowl, combine 2 tablespoons Peach Chutney with an equal amount of olive oil to make a glaze for the pork.
  2. Heat the grill. Rub the pork with a good sprinkle of salt, pepper and sugar.
  3. Grill pork to at least medium doneness, 12-15 minutes total. Just before pork is done, brush it generously with the glaze. Let rest for a few minutes before slicing.

Serve with couscous (last weeks recipe) and top the sliced pork with the chutney (recipe from two weeks ago).

Although I’m not a qualified chef I do like to pretend I’m on Master Chef. I source the recipes from the stated source (not sauce) and make them taking the photo of the meal I produce for myself.
