Chef Ray – Jamaican Jerk Paste

This paste is perfect to provide a bit of kick to your meals. Works great with chicken – checkout next week’s recipe for Spicy Jamaican Jerk Chicken, Mango Salsa + Allspice Fries

From: Lim, Nadia (2015) Nadia Lim’s Fresh Start Cookbook Penguin Random House

Makes 1 cup

  • 2 spring onions, chopped
  • 3 tablespoons thyme leaves
  • 2.5cm piece of ginger, peeled and chopped
  • 4 cloves garlic, chopped
  • 1 tablespoon ground allspice
  • 2 tablespoon brown sugar
  • 2 limes, juice of
  • 1 tablespoon tomato paste
  • 1 tablespoon soy sauce
  • ¼ cup olive oil
  • 2 large red chillies
  • 1 teaspoon salt
  1. Place all ingredients in a small food processor and blitz until well combined.

Although I’m not a qualified chef I do like to pretend I’m on Master Chef. I source the recipes from the stated source (not sauce) and make them taking the photo of the meal I produce for myself.
