This meal is flavoursome and is enhanced by the Italian Tomato Sauce from last week.

Ingredients

  • 2 large potatoes
  • 4 cloves of garlic
  • 1 large onion finely chopped
  • 2 tsp rice bran oil
  • 2 cups fine rolled oats
  • 1 tsp dry mixed herbs
  • ½ grated carrot
  • ½ cup soy sauce/tamari
  • ½ cup chickpea (besan) flour (use wholemeal flour as an alternative)
  • 4 cups Italian tomato sauce
  • 1 packet wholemeal spagetti cooked as per instructions or brown rice

Instructions

  • Boil potatoes until soft, drain and mash.
  • Mix potato and all other ingredients (except tomato sauce and spaghetti) together well.
  • Form into balls (¼ cup each) and put on a lightly oiled baking tray.
  • Bake at 150°C/300°F for 40 minutes or until cooked right through.
  • Cover meatballs with tomato sauce (warm up first if you are using from a from fridge or freezer).
  • Serve on spaghetti or rice with a sprinkling of fresh green herbs.

You can make these balls in advance and keep in refrigerator or freeze and warm up and add the tomato sauce before serving.
