Chef Ray – Spicy Cabbage Slaw

This slaw brings out flavours and combines well with a range of options.

From: Thomas, Biju & Lim, Allen (2011) The Feedzone Cookbook – Fast and Flavorful Food for Athletes Velo Press

  • 1 tablespoon lime juice
  • ¼ cup apple cider vinegar
  • ½ tablespoon brown sugar
  • 1 teaspoon kosher salt
  • ¼ head red cabbage, thinly shredded
  • ¼ head green cabbage, thinly shredded
  • ½ jalapeno, minced
  • small handful of cilantro (coriander) leaves
  1. In a small bowl, whisk together lime juice, vinegar, brown sugar and salt.
  2. Combine the shredded cabbages, jalapeno and cilantro/coriander in a large bowl. Pour dressing over and toss well.

Serve with taco, burgers and wraps.
