Rich Beef, Tomato and Thyme Filo Pies

Hearty and delicious. Packed full of quality protein these can be prepared ahead of time for reheating for dinner.

Ingredients

  • 2 tsp canola oil
  • 400 g lean rump steak thinly sliced
  • 1 onion cut into wedges
  • 1 punnet cherry tomatoes or 200g tomatoes, chopped into large chunks
  • 2 tsp dried thyme
  • 1 pkt MAGGI Hearty Oxtail Soup Mix
  • cups water
  • 4 sheets filo pastry

Instructions

  • Preheat oven to 180°C.
  • Heat oil in a large frying pan and stir-fry beef for 2 minutes. Add onion, tomatoes and thyme. Stir-fry for another 2 minutes.
  • Combine MAGGI Hearty Oxtail Soup Mix and water. Simmer for2 minutes or until thick. Add to beef mixture.
  • Divide mixture equally into 4 ramekins and cook in oven for15 minutes until bubbling
  • Top with 1 sheet of scrunched filo pastry and return to oven for5 minutes or until filo is light brown in colour.
